Access and view iTunes back to select exact deleted notes on windows 7 & 8


“I have discovered that several important notes have disappeared on my iPad mini. Perhaps up to 3 days ago. I would like to find and restore them. Checking my mail did not bring any luck (as I used to see some of my notes in mail). I connect to my windows7 & windows 8 laptops to try to access and view the backup to extract deleted notes but failed.” 

Questions 
- How can I see the backup to be able to select exact notes that was deleted?
